Northern Thai cuisine has a long history and reflects the way of life of the Lanna people, from the days of the Lanna Kingdom to the present. With a landscape surrounded by mountains, most of the ingredients are sourced from the forest and local herbs. The flavors of Northern Thai dishes focus on a well-balanced taste, not as spicy as Isaan food or as sweet as central Thai cuisine.

Many dishes, such as Khao Soi, Hang Lay Curry, and Nam Prik Num, are the result of a fusion of influences from the Burmese, Chinese Hakka, and the Lanna people in the past. The cooking methods emphasize roasting, grilling, and slow simmering to achieve the perfect taste.
